Coconut Milk Rice

Coconut Milk Rice

This is very delicious rice variety from tamilnadu

Ingredients

  • 1 cup - rice, washed and soaked in water for 30 minutes
  • 2 cups - coconut milk
  • 1/4 cup - onions, cut into pieces
  • 1 tbsp - capsicum, cut into pieces
  • 1 tsp - ginger garlic paste
  • 1 small piece - cinnamon
  • 2 pods - cloves
  • 2 pieces - cardamom
  • 1 tbsp - mint leaves, optional
  • 2 - green chillies, either cut into pieces or ground to a paste
  • 1 tbsp - oil/ghee for frying
  • salt to taste 

Directions

  1. Wash rice and soak in water for 30 minutes.
  2. Fry the cinnamon, cordamom and cloves in a pressure cooker in oil/ghee.
  3. Add onion and salt and fry till the smell of fried onion is in the air.
  4. Add salt, green chillies and capscicum and fry.
  5. Now add rice and after frying add the coconut milk and close the cooker.
  6. Cook upto one whistle.
  7. If desired, after opening you can add pudhina leaves and fried cashews for taste.
